What I'm sharing with you today may sound much more weird that it actually is, but I'm okat with that. I like recipes to be always "open" -without iindicating much of strict mesuraments, offering substitutons...-, because, even if I spend A LOT of hours checking recipes and blogs, what I like of it are the titles, ideas, twists, convinations. I can honestly say that I've never followed a whole recipe -I don't call that "cooking"-, and that's maybe why I enjoy so much cooking, trying, tasting ^^ In this case, I'll leave the recipe even more "opened" than normally since this can be a simple healthy cake, or a layered cake packed with tons of vegan protein, or a kind of healthy crunchy biscotti.
You can choose. Or change your mind while being in the middle of one of these recipes -if something turns out bad, or just different-. Or you can...try both, by adding a change to the recipe eveytime you want to eat it.
I found grated coconut, "tahini", honey, almond milk in my kitchen...and I made a cake with grated coconut and the healthier ingredients I found:
Pas primer (o opció A): Pastís de sègol, coco i espècies:
Ingredients:
-3 ous
-1 tassa de sucre morè
-3 tasses de farina de sègol
-1 sobre de llevat de rebosteria (tipus Royal)
-1 pessic de sal
-Canyella i nou moscada al gust
Tot i així normalment tarda força més.
First step -or option A-: Rie, coconut and spices cake:
Ingredients:
-3 eggs
-2 cups brown sugar -I use one because I don't like too sweet cakes-
-3 cups rie flour
-1 package backing powder
-1 pinch salt
-Cinnamon and nutmeg
-Grated coconut as you want -I think I used around 1 cup-
-1 cup olive oil
-1 cup almond milk -or wathever milk you like-
Steps:
1. Preheat the oven at 250 degrees. Prepare a pan with flour, oil or baking paper. In a bwol, mix together the eggs and the sugar. Add to the mixture salt, flour, baking podwer and milk and mix well. If you see that the batter is too thick or "dry", just add more milk until it's o.k. Add then spices and coconut as you like.
2. Once you have all the ingredients mixed together, put the batter on the greased pan and bake with low fire and mid-level in the oven.
3. I never count the cooking time, since it changes depending on the flours, oven and tempertture, but in aproximately 10 min you can already check with a stick/knife if the cake still stays in your tool -once you see the kinfe goes out "clean" and "dry", It'll mean it's done. Normally it takes around 30 minutes.
4. Once it's cooked, remove from the oven and let it cool down. You can either eat it straight away or bring it to the next level, in the following recipe:
Pas segon (o opció B): Pastís de sègol amb crema de tahini (proteïna vegana per a començar el dia): / Second step -or option B-: Rie layered tahini cake -vvegan proetin to start the day-:
Ingredients:
-The cake from the 1st recipe
For the filling cream:
-3 tbsp Tahini paste -"sesame butter", but you can also use peanut or almond one-
-2 tbsp honey -as you like-
-1/2 cup almond milk
Steps:
1. You simply need to mix all the ingredients together with a spoon, trying to find a consistence that is easy to spread. Add more milk if the cream is too dense, or more tahini if it turns out too liquid -for more sweeteness, just add more honey-.
2. To serve the cake directly on a plate -like in the photo above-, cut your cake into slices and "build" the three layers by spreading every slice with the tahiini cream. You can also just serve the cake slices and the cream separetely and let every one do it their own way -some of them will add cream, some of them won't, and some of them may just dip their slice into the cream :P -.
3. TIP: Spread just the slices you're going to eat, and keep the rest of the cream in the fridge -it lasts A LOOT-. With the lefting cake, you can also bring it to the next level:
Opció C: Biscotti de sègol i coco: / Option C: Rie coconut biscotti:
That's a perfect treat to make if:
1. Your cake turned out too much cooked, or a little bit raw, or broken.
2. You left the cake for too much days and it's becoming dry -that's pretty much impossible, because CAKES SHOULD NEVER LAST, and in the case they do, since they're made of whole-wheat flours they last perfect way longer-.
3. You siply want to try all the possible twists a recipe can have, as me :3
INGREDIENTS:
-Just the cake from recipe A
STEPS:
-Preheat the oven at 250 degrees. Cut our cake into slices -you can cut them into bsicotti shape like in the photo above, or just be creative-. Bake them as if they were cookies until they get crispy a nd brownish -yuum!-.
-You can either eat them as healthy cookies, dip them into hot ch ocolate or other dips, or serve them with a hot nice tea.
