Ingredients:
· 1 got i ½ de farina (n’he utilitzat d’espelta)
· ¼ de got amb galetes esmicolades (n’he utilitzat de civada, tot i que les Speculoos hi haguessin anat molt bé)
· ¼ de cullera de sal
· 1 cullerada de Royal
· ¾ de got de sucre morè
· 1 got de puré de carbassa (carbassa cuita i feta puré)
· ½ got d’oli d’oliva
· 2 ous
· ¼ de got de llet vegetal
· Nou moscada en pols al gust (n’he posat 1 pessic)
· Canyella en pols al gust (n’he posat 2 pessics
· Pel “crumble” de sobre:
· 1/2 got de galetes esmicolades
· Canyella al gust
1. Preescalfem el forn a 180 graus
2. Barregem els ingredients en un bol (a poder ser començant pels humits)
3. Untem amb oli el motlle escollit i hi posem la massa
4. Esmicolem les galetes de civada per sobre de la massa i enfornem
(ENGLISH) Oat cookie pumpkin pudding
Now it's the greatest season for having all kinds of vegetables and fruits from our garden -actually a little to much, we're starting to feel like if we were in the "veggie curse" :S, especially with our zucchinis and pumpkins-. This days I've been making many pastries as zucchini brownies, zucchini and oats cookies, but my camera wasn't working until now, so I'll wait to make them again to post it's recipe and photo. Luckily, my camera is fixed now, so today I'm sharing with you my pumpkin bread, or pumpkin pudding with spices with an oats cookies crumble, or whatever it is :P Hope you enjoy it!
Ingredients:
· 1 1/2 cups flour (I've used spelt flour)
· ¼ cup oat cookies crumbs -Eventhough Speculoos cookies or others would work too-
· ¼ tsp salt
· 1 tsp baking powder
· ¾ cup brown sugar
· 1 cup pumpkin puree
· ½ cup olive oil
· 2 eggs
· ¼ cup veggie milk
· 1 pinch nutmeg
· 2 pinches cinnamon
· For the crumble at the top -streusel topping-:
· 1/2 cup oat cookies crumbs
· 1 pinch cinnamon
1. Preheat the oven at 180 degrees
2. Mix all the ingredients in a bowl -preferably starting for the wet ones-
3. Spread the baking pan with oil and pour the batter in it
4. Spread the cookie crumbs on the top of the cake and bake it for around 40 minutes
