Començo aquesta entrada amb dos discuples i, com sol passar, també amb la seva corresponent excusa:
Perdoneu per haver tingut el blog tant abandonat, però he estat molt centrada en donar forma a aquest projecte (que us animo a visitar) que, tot i que respecte el lloc on es durà a terme, la cosa no està gens clara, la fantàstica rebuda que ha tingut aquesta idea m'ha fet decidir que es farà si o si; sigui on sigui.
Perdoneu, també, la mala qualitat de les fotografies, però a l'estar dividida de cases, sempre em deixo la càmara al lloc on no la necessito, i el dia d'aquest pastís no va ser una excepció :P
Dit això, us presento el pastís que vaig crear ahir, totalment inventat, fruit només de la barreja de totes les coses que a ma mare li encanten i em van venir al cap (perquè és per al seu aniversari que el vaig fer). El resultat va ser un pastís sense gluten, altament proteïc, baix en greix, súper saludable, i amb molt poc sucre. Les cireres, a més, són de temporada i, en el meu cas, de casa meva. La quinoa i el blat sarracè contenen múltiples propietats beneficioses per a la salut i un alt nivell de proteïnes vegetals, de manera que esdevé ideal per a celíacs, vegetarians, i tots aquells qui desitgen "pecar", però amb quelcom nutritiu.
Com que la recepta me l'anava inventant al moment, em va sortir més massa que la que em cabia al motlle, de manera que vaig provar-ho també en "cupcakes" i galetetes cruixents :3

Sorry for having the blog so abandoned, but I've been very focused on giving shape to this project -which I aim you to visit- that, even if the spot where It'll take place it's not sure yet, since everybody has been so excited and supprotive with that, I've decided to do it anyways -there or somewhere else-.
Excuse me also for the bad quality of my pictures, but since I've been constantly changing of house, I always forget my camera where I don't need it :P
But let's focus on the cake, that is a compeltely new creation inspired just by those things that my mum likes the most -since it was her birthday-. The result was a gluten-free cake, high proteïn, low fat, healthy and low-sugar. The cherries are a seasonal fruit that, in this case, I just picked from my garden. Quinoa and buckwheat are superhealthy and super nutricious food, that are high in protein, low in carbs and fat, and perfect for celiacs, vegetarians...and all who wants to "cheat" a little, but with something nutritious.
As I just created the recipe at the moment, I got more batter than I needed, so I also tried it in cupcakes and crunchy cookies :3
INGREDIENTS:
-1 tassa de quinoa seca
-1 tassa de farina de blat sarracè
-2 tassa de coco ratllat
-3 ous
-Mitja tassa d'oli
-1 pessic de sal
-3 tasses de cireres
-1 llimona
-1 sobret "Royal"
-Mitja tassa de sucre morè
-3-4 cullerades de mel
INGREDIENTS:
-1 cup uncooked quinoa
-1 cup buckwheat flour
-2 cups grated dry coconut
-3 eggs
-1/2 cup olive oil
-1 pinch salt
-3 cups cherries
-The zest of 1 lemon
-1 package baking powder -16g aprox-
-1/2 cup brown sugar
-3 or 4 tablespoons honey
PASSOS:
1. Coure la quinoa amb dos tasses d'aigua i un pessic de sal en un recipient tapat a foc mig, per uns 15 min (o fins que es quedi sense aigua). Mentrestant, treure el pinyol de les cirereres i col·locar-les en un pot metàl·lic a sobre el foc baix, cobertes i, en cas de que s'enganxin
afegir-hi unes gotetes d'aigua. En uns minuts, barrejar-hi el coco i deixar que s'impregni del suc de les cireres i que aquestes es coguin una mica. Amb el foc apagat, afegir 3 cullerades de mel (o al gust) i tapar, fins que es fongui amb la calor. Remenar.
2. Preescalfar el forn. En un bol, batre els ous, el sucre, la farina, "Royal", quinoa i oli. Rallar-hi la pell d'una llimona i afegir-hi la barreja de cireres i coco. Endolcir més al gust. Afegir més farina en cas d'una consistència massa poc espessa.
3. Untar lleugerament amb oli el motlle desitjat i abocar-hi la massa. Coure el pastís a nivell mig del forn i a uns 150°. El temps de cocció devia ser d'aproximadament 30 minuts, però el cas és anar-ho revisant constantment amb punxó, i retirar el pastís un cop aquest surti net/sec.
PD: Per a les galetes, simplement vaig abocar cullerades de massa separades en una safata amb paper d'enfornar, i les vaig coure fins que quedessin cruixents d'un costat i altre. Aquesta textura queda accentuada per la quinoa torrada, i constitueixen un snack proteïc, sense gluten, sa i deliciós.
STEPS:
1. Cook the quinoa and 2 cups water plus a pinch of salt with a lid for around 15 minutes -or until all water is evaporated-. Meanwhile, remove the cherry bones and put them in a pot with a lid and low fire -if they stick to the pot, add some drops of water-. After some minutes, add the coconut to the cherries and let it permeate the juice of the cherries. Turn off the fire and add honey to taste to the mixture, and cover it with a lid, until the honey is completely melted. Mix well.
2. Preheat the oven. In a bowl, whisk together eggs, sugar, flour, baking powder, the cooked quinoa, lemon zest and olive oil. Add the cherr-coconut mixture too and mix well. Add more sugar/honey to taste and more flour in case the batter is too liquid -it happened, but you know I don't work with recipes :P -.
3. Grease a baking pan and put the batter in it. Cook it in the oven for around 30 minutes, or until a stick comes out clean.
PS: For the cookies, I simply preapred a baking tray with baking paper on it, and add spoons of batter -separated one from eachother-. I cooked it until they were crispy for both sides, which probably took me around 15 minuts -I know....but you know I'm not good with timings/mesurements-.
